Fish Tacos/Tostada

Yesterday and today we made fish tacos for dinner - I got the idea from my co-worker Sheri and ran with it. It was super easy, tasty and nutritious. I used Cod for the fish because it was on sale, but you could use any white fish you want. For time sake, I bought pre-made pico de gallo. Next time I will make my own pico. I went more for the tostada style, but Jordan doesn't roll like that so he opted for taco style. Very simple dish : Corn Tortilla, Fish (I baked mine, and then pulled it apart), Pico, Light Sour Cream and/or cheese if you dare (not necessary) , and a good squirt of Lemon juice - - - - DELISH!
